I love my Vita-Mix, but I also love to cook.
So when I make time, these books are my all time faves:
How to Cook Everything Vegetarian: Simple Meatless Recipes for Great Food – this is a cookbook I can’t put down. It’s a great reference even for those who can’t boil water. It’s also where I the quote mentioned above is from.
Vegan Soul Kitchen: Fresh, Healthy, and Creative African-American Cuisine – this is one of the most creative cookbooks I’ve seen to date. Bryant Terry offers an accessible approach to Soul Food-inspired meatless meals, complete with a soundtrack.
The Mediterranean Vegan Kitchen – one of my first vegan cookbooks, this cookbook ultimate defined my dietary philosophy. I love that the recipes focus on real, clean food. Some of the recipes are a bit labor intensive, so you have to make sure to read through the recipe in its entirety before you get started.
Honorable Mention:
Veganomicon: The Ultimate Vegan Cookbook – While I never got around to trying out any recipes (a coworker stole it) I did browse through the pages enough to see a lot or recipes worth attempting.
